Japanese-Peruvian food is not a combination that you will hear often, but it is actually a great combination. I prefer the Peruvian food at Higo Sushi, but if you want to mix it up and get both you can definitely do that.
Peruvian food is something that I eat a lot when I am in California, as there are a lot of good Peruvian restaurants down here. If you have never been to a Peruvian restaurant before, you have to try their green sauce. It is a sauce that is offered at most Peruvian restaurants, and it goes well with literally anything. I am not sure what it is made out of (some sort of chili I am guessing), but the taste is incredible. Higo Sushi’s green sauce is one of the best that I have tried.
Also, if you are trying Peruvian food for the first time you should try the lomo saltado. It is the dish pictured in the image above (french fries, onions, and beef in a sauce served with rice), and it is one of the main staples of Peruvian cuisine.
While I only really get Peruvian food from Higo Sushi, having Japanese food on the menu makes it easier to find stuff for everyone to enjoy. I believe the owners are part Peruvian and part Japanese, and this is why they have this fusion cuisine.
